Charlie Mann established Charles Oliver Wines during the 2020 vintage. Mann, who previously worked in music recording, moved into winemaking after meeting Owen Latta in 2019. The label began production at Eastern Peake in Coghills Creek, crafting its first release from certified organic Shays Flat Grenache.
Fruit is sourced from Pyrenees vineyards, including Grenache and Syrah. The winemaking approach focuses on organic viticulture, minimal intervention, wild fermentations, and lower alcohol levels. The wines are bottled without fining or filtration and with low preservative additions.
