Hanging Rock Winery

Hanging Rock Winery was founded by John Ellis and his wife Ann, daughter of Hunter Valley wine figure Murray Tyrrell. In the late 1970s John was the first winemaker at Rosemount Estate; the couple then moved to Victoria, where John set up Tisdall's winery at Echuca and pioneered styles now taken for granted, including Australia's first cool-climate Chardonnay, its first commercial Merlot and its first Cabernet Merlot blend.

In 1982 they bought the Jim Jim property in the Macedon Ranges, chosen because the region is arguably the coldest in mainland Australia and ideal for their great passion, sparkling wine. Hanging Rock's flagship Macedon sparkling is made by the traditional method, and the winery also produces cool-climate still wines from the Macedon Ranges and Heathcote Shiraz.

The family also runs a beef herd and Speckle Park cattle stud on the property. The cellar door at Newham, near the famous Hanging Rock, offers tastings with views over the ranges.
