Savaterre is a vineyard at Everton Upper near Beechworth, in north-east Victoria. Winemaker and co-owner Keppell Smith spent several years in the money markets before setting out to find a site and become a winemaker; after months of talks with a local farmer, he bought the land and planted the vineyard in 1996.
The vineyard sits at 440 metres on ancient granitic 'buckshot' gravel over decomposed clay, which drains well while holding some water for summer. The poor soil and close planting, at 7,500 vines per hectare, keep crops small and flavours intense.
The vineyard is farmed along organic principles, with no pesticides.
