Established over ten years ago, The Hermit Ram is a New Zealand wine project based in North Canterbury. The founder and winemaker is former ecologist Theo Coles, who also set up a limestone vineyard in the Waipara Gorge.
Fruit is collected from growers who farm carefully and small vineyards across the region. Viticulture is organic, focusing on no-spray, no-till methods and low copper use. The winemaking approach features natural fermentation, old techniques, minimal handling and additions, and careful, small amounts of sulphur dioxide. The label produces several wine ranges, including Singular, Seasonal, and Zealandia.
