Waratah Hills is mainland Australia's southernmost vineyard and cellar door, at Fish Creek in South Gippsland, a stone's throw from Wilsons Promontory. The vines were established in the mid-1990s with help from revered producer Phillip Jones of Bass Phillip, densely planted and trained low in the Burgundian manner.
Two-thirds of the vineyard is Pinot Noir and one-third Chardonnay, on nutrient-rich volcanic soils and red clay.
The cellar door is a converted tractor shed, open Friday to Sunday, with dining and group events. Waratah Hills also makes a gin with Wild Dog Gin, infused with bunches of its freshly harvested Pinot Noir.
