Sinapius

Sinapius is a boutique, family-owned vineyard and winery in the Pipers Brook region of northern Tasmania, on the Tamar Valley wine route. It is run by Linda Morice, who bought the original two-hectare vineyard in 2005 with her late husband Vaughn Dell. Both were born and raised in Tasmania, and after years in Sydney their love of the island drew them home. The name comes from Linda's ancestor Isabella Sinapius, whose father migrated from Prussia in the early 1800s.

The family see themselves as wine growers rather than winemakers, with no separation between vineyard and winery: they hand-tend the vines, make the wine on site and sell it through the cellar door.

All wines are fermented with natural yeasts, with no added enzymes or tannins and minimal sulphur. The Pinot Noir is carefully sorted, gently destemmed to keep berries whole, kept on skins for about three weeks and matured in French oak.
